What Happened

Moots Technology, a South Australian digital transformation firm based at the Tonsley Innovation District south of Adelaide, has publicly detailed TonsleyAI, its flagship private AI platform for small and medium enterprises.
The platform takes its name from the precinct where it was built. Managing Director Oliver Bischof, who has 25 years in digital transformation, said the product emerged from a specific problem: companies wanted to put AI at the centre of their operations but were reluctant to expose sensitive business data to public cloud models.
TonsleyAI is built from three components working together: a customisable private AI engine, a conversational interface modelled on the ChatGPT experience, and a workflow automation engine that brings every tool into one environment. It can be deployed in a private cloud or as on-premises hardware integrated directly into a company's infrastructure.
Bischof said the platform is fine-tuned for each customer. "AI does two things well in a business; it automates repetitive work and it captures expert knowledge so it can be scaled. We fine-tune a model to each customer, so it understands their industry, policies and products," he said.
He drew a clear distinction from general-purpose AI tools. "It's not a generic model you ask basic questions to such as 'who won last year's AFL Grand Final?' It's designed for business use and continuously fine-tuned to a specific environment, making it far more powerful and relevant than your typical AI model."
Why It Matters
The Australian Privacy Principles, administered by the Office of the Australian Information Commissioner, set binding obligations on how organisations handle personal information. Businesses that process customer or employee data through third-party AI services face questions about where that data is stored and who can access it. Moots Technology says TonsleyAI addresses this directly by keeping data within the customer's own infrastructure.
Bischof reported measurable results from existing deployments. "Customers have seen a dramatic improvement in productivity, depending on the use case, with automation increasing productivity by an average of 70 per cent," he said.
Key Details
One documented application of the platform is BevSage, a product built for Hydra, a beverage-sector consultancy. Hydra's team described the tool in terms of what it delivers to clients: "BevSage combines BevGPT, a proprietary assistant built on OpenAI's GPT models and connected to our beverage-sector frameworks, market data and consulting playbooks, with practical AI tools for marketing, research, distributor identification and growth."
The company said the product changes how advisory work scales. "For Hydra, BevSage turns advisory expertise into a scalable digital product. For producers, it puts high-level market support on their screen whenever decisions need to be made."
Bischof described the company's broader philosophy on AI adoption. "We see AI as not a replacement for expertise, it's an enhancement, so businesses can do more sales, improve product design, engineering and marketing, and focus less on repetitive tasks."
Background and Context
Moots Technology combines what it describes as local South Australian expertise with German engineering. Bischof identified a particular opportunity in businesses going through ownership transitions. "We see a lot of owner-run businesses that have always done things one way, but when ownership changes or it passes to a younger generation, there's a real push for change. That creates strong opportunities for digital transformation in South Australia and interstate," he said.
The Tonsley Innovation District, where Moots Technology is based, is a former Mitsubishi Motors manufacturing site redeveloped by the South Australian Government as a hub for advanced manufacturing and technology companies.
What Comes Next
Bischof said the company's primary focus remains South Australia, though it has received interest from interstate. "South Australia is home and our priority remains being the expert private AI partner for local businesses, while the growing interstate interest is proof the model works and strengthens the experience and capability we bring to companies here."
No timeline for interstate expansion or new product releases was given in the published material.
